The mince is produced from the breast and shoulder which ensures it is soft and flavoursome. It is then trimmed to ensure it is lean but that the meat still retains its flavour.
Diced lamb produced from the shoulder, expertly boned, trimmed and diced into an ideal size for any number of dishes. The shoulder is marbled to give i its flavour and tenderness and as such is trimmed very lean to suit all palates.
