Looking for some ideas to refresh your menu now that summer is here? Keen to add more lean meats and seasonal fresh vegetables into your diet?

We all know that eating meat every day isn’t great for our bodies so as the warmer months approach here are some simple ways to healthily include meat into your diet 3-4 times a week along with plenty of seasonal, nutrient-rich vegetables.

ENJOY A TASTE OF THE MEDITERRANEAN

Greek lamb flatbreads Welsh lamb is still beautifully succulent at this time of year. Marinated in lemon juice, garlic, oregano and olive oil and served with flatbreads and a low-fat homemade British cucumber tzatziki. You’ll be transported back to Greece in a moment.

Lamb tagine Lean diced Welsh lamb is perfect for cooking slowly with onions, garlic, ras-el-hanout, tomatoes, chickpeas and dried apricots for a fruity, healthy dish with a taste of Morocco.

Spicy stuffed peppers – Cook turkey or lean beef mince with plenty of spices, onions, garlic and tomatoes together to fill roasted, sweet red peppers. A meal in itself or serve with some simple lemon and coriander couscous.

CELEBRATE SEASONAL PRODUCE

Griddled lamb leg steaks Leg is the leanest cut of lamb and is ideal grilled, BBQ’d or griddled. Serve with new potatoes covered in fresh mint, spring greens, and sweet beetroot.

Spicy Cajun chicken Simple to prepare and bake in the oven and delicious served with a fresh green salad and a sweetcorn and nectarine salsa made with zesty lime and fresh mint.

Grilled pork medallions make the most of flavoursome courgettes, peppers and tomatoes at this time of year by making a delicious homemade ratatouille to serve on top of seasoned, grilled pork

MAKE IT EASY & TASTY…

Moroccan chicken traybake – add peppers, courgette, aubergine, red onion with spices and chicken breasts, bake in the oven (while you sip a cool drink in the evening sun) and then serve. There’s less washing up too!

Classic Bolognese – A slow cooker isn’t just for winter meals. In fact, a slow cooker is perfect on long hot days as it saves you from the extra heat of the oven. Add grated courgette and red or green lentils to lean steak mince, onions, garlic and chopped tomatoes, then simply leave to cook all afternoon and cook some pasta when the day cools and you’re ready to eat.

Summer chicken stew – One-pot stews are a great option for summer too. Easy to prepare and with lots of fresh flavours. Use flavoursome chicken thighs and add seasonal new potatoes, French beans, leeks and peas.

MEALS FOR THE FAMILY

Chicken or pork skewers. A great way to get kids involved with the cooking. Marinate diced pork tenderloin or chicken breast in low fat yoghurt and spices to tenderise and add flavour. Then add to skewers along with plenty of bright and colourful veggies like peppers, red onion, and courgette before grilling or BBQ-ing.

Roasted lemon chicken. Halve a lemon and place it in the cavity of the chicken and then roast early in the day when it’s cooler.  Then enjoy yummy succulent cold chicken with sweet potato wedges, wraps, salad and coleslaw.

Summer chilliMake a veg-packed chilli using lean (5% fat) beef, pork or turkey mince, peppers, peas and beans and let everyone dig into taco shells piled high with crispy iceberg lettuce, fresh tomato salsa, sweetcorn and grated cheese.

FOOD TO ENJOY OUTDOORS
