A British pub classic, simple and easy to make in the comfort of your own home. A savoury staple combining chicken, cheese, and bacon in the best way possible.
Hunters Chicken
Preparation time 10 minutes
Cooking time 25 minutes
Serves 4
Ingredients
•4 chicken breasts
•150g smoked cheddar cheese, grated
•8 rashers of smoked streaky bacon
•1 onion, peeled and chopped
•1 clove of garlic, peeled and chopped
•200ml BBQ sauce
•2 tbsp vegetable oil
•50g butter
Method
Step 1:
Pre-heat oven to 180c.
Step 2:
Place vegetable oil in a pan and heat gently, add the chicken breasts and sear for 2-3 minutes each time.
Step 3:
Remove from the pan.
Step 4:
Add the BBQ sauce, cook for a further 3 minutes and remove from the heat.
Step 5:
Wrap the chicken breasts in the bacon and place in an oven-proof dish.
Step 6:
Cover with BBQ sauce and cheese.
Step 7:
Bake in the oven for 25 minutes.
Step 8:
Remove and serve with salad.
Chef's Tips
For that extra kick of flavour, baste the breasts occasionally with their own liquid and sauce that are in the pan during cooking. Before serving, you should always allow a decent amount of resting time so the breasts are completely marinated.
To add some colour to the dish, you could always add your greens…asparagus and tenderloin broccoli being our favourites.
