marinated beef kebabs on a barbecue

Marinated Beef Kebabs

Preparation time 20 minutes (or 24+ hours to marinate overnight)
Cooking time 10 minutes
Serves 6-8

Colourful, juicy, and boasting the flavours of summer, these beef kebabs are put together using marinated steak pieces to infuse extra flavour and tenderness.

Ingredients

Kebabs
•750g of sirloin steak tips or another steak cut
•3 bell peppers (red, yellow, and green)
•1 large red onion
•16 small mushrooms
Marinade
•1 tsp minced garlic (2 large garlic cloves)
•1 tsp onion powder (or garlic powder)
•2 ½ tbsp soy sauce
•2 tbsp Worcestershire sauce
•2 tbsp balsamic vinegar
•1 tbsp vegetable oil
•1/4 tsp black pepper
Cooking Utensils
•16 flat metal skewers
•Olive oil, for drizzling and cooking
•Finely chopped parsley

Method

Step 1:
Cut the beef into 3.25cm wide cubes.

Step 2:
Mix Marinade in a bowl. Add beef. Marinate for 1 – 24 hours, a minimum of 20 minutes.
Cut capsicum and onion into 3.25cm wide squares.

Step 3:
Thread the beef, vegetables, and mushrooms onto each skewer. Use two vegetables between each piece of beef. It’s important to thread loosely as it helps even cooking.

Step 4:
Brush the kebabs lightly with the Marinade then drizzle with olive oil.

Step 5:
Heat the BBQ or large skillet over high heat. Add 1 tbsp oil, then when smoking, cook kebabs in batches for 2 minutes on each side until slightly charred, basting with more layers of Marinade as you go.

Step 6:
Transfer to a plate, then cover loosely with foil and rest for 3 minutes before serving. Garnish with parsley if desired.
